Quinoa Caprése Salad
Ingredients
- 1 c. quinoa
- 2 c. vegetable broth
- ½ c. fresh basil
- 1 ball of mozzarella or burrata
- ½ pint cherry or grape tomatoes
- ½ tbsp. olive oil
- ½ tbsp. balsamic vinegar
Directions
Cook quinoa according to directions in vegetable broth. Chop the basil, mozzarella, and tomatoes. Mix together with the quinoa and drizzle the olive oil and balsamic vinegar.
Strawberry Pecan Salad
Ingredients
- 4 c. mixed greens
- 1 c. strawberries
- 1 c. pecans
- ½ c. feta
- ½ c. balsamic vinaigrette
Directions
Wash and chop mixed greens and strawberries. Combine with pecans and feta. Dress salad immediately before serving.
